  • It is also known as ascorbic acid.
  • It is a water-soluble vitamin.

  • Our teeth are constantly exposed to invading bacteria. Vitamin C protects us from periodontal diseases by enhancing our body's defense mechanisms.
  • Toxicity of this vitamin is very rare as it is regularly excreted by the body because it is water soluble.
  • It should be consumed every day because it is not fat-soluble and, therefore, cannot be stored for later use.
  • It can be lost from foods during preparation, cooking, or storage.
    • Serve fruits and vegetables raw whenever possible.
    • Steam, boil, or simmer foods in a very small amount of water, or microwave them for the shortest time possible.
    • Cook potatoes in their skins. Be sure to wash the dirt off the outside of the potato.
    • Refrigerate prepared juices and store them for no more than two to three days.
    • Store cut, raw fruits and vegetables in an airtight container and refrigerate—do not soak or store in water. Vitamin C will be dissolved in the water.
  • The RDA is 75 mg per day for female adults and 90 mg per day for male adults. Add 35 mg if a smoker.

Selenium
  • Selenium occurs only rarely in the free state in nature.
  • It is a nonmetal that is chemically related to sulfur and tellurium.
  • It is toxic in large amounts, but trace amounts of it, forming the active center of certain enzymes, are necessary for the function of all cells in (probably) all living organisms.
  • It is a trace element nutrient which functions as cofactor for reduction of antioxidant enzymes such as glutathione peroxidases and thioredoxin reductase.
  • It also plays a role in the functioning of the thyroid gland by participating as a cofactor for thyroid hormone deiodinases
  • Dietary selenium comes from cereals, meat, fish, and eggs.

  • Latin Name: Vitis vinifera
  • It contains: polyphenols - proanthocyanidins, resveratrol and quercetin

      • They help to keep damaged, stretched, or stiff blood vessels from leaking.
